History of the Hotel
Construction of the Marcus Whitman Hotel began in September 1927. Amid much
enthusiasm, the hotel officially opened on September 1, 1928. At the time the
hotel opened, it was the most luxurious hotel for miles around. It was also the
only hotel on record at that time that used the same system for heating and
cooling the rooms.
Through the years, the hotel has hosted numerous dignitaries and celebrities,
including President Dwight D. Eisenhower, Vice-President Lyndon B. Johnson,
Louie Armstrong and Shirley Temple.
By the 1970's, the hotel had begun to slide into disrepair. In 1999, Kyle
Mussman formed Real Estate Improvement Company and bought the historic
structure. Sharing a community vision with the City and Port of Walla Walla,
they restored and expanded the grand old building to provide not only classic
elegance and style, but also cutting-edge technology for today's conference
needs.
The Marc Restaurant and The Vineyard Lounge
Located just off the hotel's historic lobby, The Marc Restaurant combines
Regional Seasonal fun with creative and inspired Pacific Northwest Cuisine.
Lunch and dinner menus highlight local ingredients. Enjoy local and regional

In the morning, don't miss the Hot and Healthy Breakfast Buffet, served
fresh every day for all guests in The Marc Restaurant. Choose from all your

rolls, cereal, fruit, coffee, juice, and more.
Hank "Bear" Ullman, Executive Chef
A native of Maui, Executive Chef Bear Ullman has trained in some of the finest
kitchens in the world. From his first apprenticeship under distinguished
European chefs at Westin Hotels, he has demonstrated his culinary skills at top
restaurants in San Francisco, Denver and Boston.
Chef Bear has built The Marc Restaurant's excellent reputation by highlighting
the Walla Walla Valley's profusion of high quality, locally grown products and
award-winning wines. He selects only the freshest, organically produced
ingredients from the area's finest purveyors, including the Ideal Organics
Farmer's Co-op, Thundering Hooves Farm, Monteillet Fromagerie, and Locati
Brothers. Based on available ingredients, Chef Bear changes The Marc's menu
three to four times per year, ensuring a unique and unforgettable dining
experience every time you visit.
