Recipe Notebook- Cherry Blue Salad, Kay Simon, Chinook Wines
Summer Recipe Cherry Bleu Salad from Kay Simon, Winemaker, Chinook Wines
 Ingredients: 4 1/2 - 5 C torn Radicchio lettuce 4 C torn Butter lettuce (about 1/4 head untrimmed) 1 small red onion (thinly sliced) 4 oz. crumbled Gorgonzola cheese Marinated Chukar cherries (see below)
Dressing: Equal parts Raspberry Vinegar (Kay recommends Perseus) and Olive Oil (Kay recommends the Extra-fruity from DeLaurenti)
Soak 4 ounces of sweet and tart Chukar Cherries in 1/2 cup of Merlot for at least an hour. Bring just to simmer on medium heat and then cool. Rinse with cool water to remove excess sugars and chill in refrigerator. Add to salad just prior to serving.
